Ingredients

6 large eggs

3 tablespoon cayenne olive oil

1 medium yellow onion (chopped)

1 red bell pepper (chopped)

1 can tomatoes

1 small tomato (chopped)

2 cloves garlic (chopped)

1 teaspoon paprika

1 teaspoon ground coriander

½ teaspoon ground cumin

¼ cup cilantro (chopped)

½ teaspoon salt

¼ teaspoon ground black pepper

Red chili flakes to garnish

Instructions

  1. Heat cayenne olive oil in a skillet over medium heat. Add chopped onions, garlic and red bell pepper and continue to cook for 2 minutes until soft.

  2. Add spices, salt and ground pepper and cook for further one minute until the raw smell goes off.

  3. Add a can of tomatoes and chopped tomato the skillet, cover and cook for 15 minutes until the sauce thickens.

  4. Now make 6 wells into thickened sauce and crack each egg into each well, do not stir. Cover & cook for 5-6 minutes until the eggs are still runny.

  5. Remove the skillet from heat, add chopped cilantro and garnish with red chili flakes. Serve hot with toasted pita or bread slices.
