Penne Pasta with Balsamic Glaze

Ingredients
8oz. penne pasta (uncooked)
1 medium red onion (diced)
1 red bell pepper (deseeded and diced)
½ cp broccoli florets
½ cup grape tomatoes
½ teaspoon garlic powder
½ cup traditional balsamic vinegar
1 tablespoon garlic infused olive oil
1 teaspoon brown sugar
2 tablespoon parmesan cheese
½ teaspoon salt
¼ teaspoon ground pepper
Instructions
- Cook pasta as per the package instructions, then drain and set aside.
- Heat a skillet over medium heat, add olive oil and the vegetables such as onions, red bell pepper, broccoli florets and grape tomatoes. Sprinkle the garlic powder, salt, pepper and stir fry for 2 to 3 minutes. The cooked vegetables should remain crunchy.
- Transfer the stir-fried vegetables to a plate. In the same skillet, add balsamic vinegar, brown sugar. Cook this mixture until it was reduced to half and thickens. Balsamic glaze was ready.
- In a large bowl, add cooked pasta, stir-fried vegetables and drizzle the prepared balsamic glaze and toss gently to mix.
- Serve the penne pasta with balsamic glaze topped with parmesan cheese.
